I recently went Strawberry Picking (for the first time ever) and took home a bucket of freshly picked strawberries that I needed to find something to do with. I had all these ideas and recipes I was going to try and my husband put my strawberries in the freezer before I was able to wash them, cut them and freeze them in zip lock bags. He just took the bucket and placed it in the deep freezer and didn’t even tell me! The nerve of him! Well, once I realized what he had done and saw how strawberries thaw out, I was so disappointed. They get real soggy and I didn’t like the texture, not even to eat it. I didn’t want to throw them out so I decided to make Strawberry Pina Colada daiquiris and Strawberry Pina Colada smoothies with them, the texture wouldn’t matter once they were all pureed in the blender. My favorite daiquiri in the entire world is a Pina Colada, so why not combine the strawberries with my favorite pineapple coconut treat. Below is the recipe for a tasty Strawberry Pina Colada Daiquiri. You can check out my first Strawberry Picking experience, it was FUN!!! Strawberry Pina Colada Daiquiri Recipe:
1 cup of Ice
4 fl. oz. of DOLE Pineapple Juice
4 fl. oz. of Coco Real gourmet Cream of Coconut OR Coco Lopez
1/2 cup of diced strawberries
1/2 cup of dices pineapples
3 fl. oz. Rum (Optional)
*Mix well in blender and garnish with pineapple wedge and maraschino cherry
For more of a fruit smoothie you can add 4 ounces of vanilla yogurt! (leave out the RUM)
You can also increase the amount of fruit if you wish.
